I have read the Home Theater Installation guide and found if very useful. I am actually an installer in MN, so if it was useful to me I am sure it will help you in the design of your Home Theater too.

I was thinking of buying a Mitsubishi HC1600 HD DLP Projector for $700, but would it be able to keep up with a computers quick tasks? Like during high speed gaming? Also are there high quality projectors out there that are specifically made for computer gaming? The projector won't be used for everyday tasks, just for when I'm on EVE or watching a movie from my computer.

For gaming, the most important thing is brightness and contrast.  I would consider something along the lines of an Epson 8100 HD Projector for current-gen console and computer gaming especially (in my opinion) a game like EVE which really contains a lot of contrast, lighting, distant objects and fine detail. The image will keep up fine for high speed gaming.
